Visit to the Red Hypogeum Oil Mill of Martina Franca

The visit to the Frantoio Rosso Ipogeo gives the feeling of traveling through time: first when Puglia was submerged by the sea until the last century, when olive oil was produced. The route starts from the observation of marine fossils embedded in the limestone rock, and goes through the late medieval centuries when lampante oil was produced and exported to Europe. It will include the production phases and equipment used at the time, and then conclude with the last period of the mill, when the production from lamps and lampante oil was transformed into edible oil.
